eans...... most of you know my loathing for beans, peas and mostly any legume other than alfalfa sprouts. Yes, I am making beans for dinner tonight. So maybe at the end of the evening I will have learned to like them.

There were some organic Black Turtle Beans on sale at the store the other day, so I picked up about 5 cups of dried beans. The recipe for tonight is Buffalo, Black Beans and Rice. Which can be cooked in the oven, but I am doing it in the slow cooker today. I have had Mexican dishes with black beans and rice and out of all of the beans, I like the black ones the best. 

Buffalo, Black Beans and Rice

 Brown 1/2 to 1 pound of ground meat (beef, buffalo, turkey, goat etc)
1- 2 cups chopped onion
1- 2 cups chopped green pepper
1 clove or more of garlic
1 Tablespoon lemon Juice
1 Tablespoon prepared Mustard
1 teaspoon chili powder
2 Tablespoons non-MSG soy sauce
1-2 cup tomato sauce
2 cups soaked black turtle beans

Brown the meat with all the vegetables. In a small bowl add the rest of the ingredients and stir up well. Add everything into a slow cooker and simmer all day. Or toss into a casserole dish and cook for 20 minutes in the oven at probably 350F.

Cook brown rice (usually 2 cups rice to 4 cups water, bring to a boil, reduce heat  and cook at a simmer for 35 mins)and then pour the meat/bean mix over the top of each serving.

 

"Daisy" is still the same. We have to hoist her up twice a day, though we only got to get to her once yesterday since we left early and got home well after 9 pm. She is still happy and eating well and will stand once we get her up. Maybe we should build her a shelf to lay on, but can stand if she puts her legs down. It is very frustrating, not knowing what is wrong with her. I hope she has her calf soon.

The chickens are laying 4 eggs each day. We got a dozen in 3 days. I need to do alot of baking to get rid of the 58 storeboughten ones. I actually hate the sight of white eggs in my refrigerator. I wonder when the rest of the flock will start kicking in. I think it is the Rhode Island hens which are laying 3 a day and a Barred Rock laying the lighter one.

It is above freezing today. The eves of the house are dripping. And then by next Monday is it supposed to be back down to -20C at night.
