have been craving ginger like mad the last few days. Ginger beef for breakfast and 2 dinners and now gingerbread cookies. I went to grab some coffee for my co-workers since I was out and about picking up pictures for an article and I broke down and bought a 90-cent cookie. Besides the insulation for the pumphouse and new windshield wipers (as it was getting to be a hazard driving), I have bought nothing other than gas for my truck, milk, butter and animal feed in the last 5 weeks. So I decided I deserved a treat of a gingerbread man. Now I am craving more of them.

Molasses Gingerbread Men

2 3/4 cup  sifted flour
1/3 cup  brown sugar
1 teaspoon baking soda
1/3 cup  dark molasses
1 teaspoon sea salt
1 egg, well beaten
2 teaspoon cinnamon
1/3 cup  melted shortening or butter
1 1/4 teaspoon ground ginger

Sift flour, soda, salt, cinnamon, ginger and sugar into bowl. Add brown
sugar, molasses, egg, and melted shortening. Stir to mix thoroughly. Chill
dough for at least one hour. Roll on floured board to 1/4" thickness. Cut
with floured cutters and bake on a greased cookie sheet at 375 degrees for
8 to 10 minutes.

After the cookies are baked, you can decorate them.
