hatever you call today, Halloween, All Souls Eve or Samhain... Have a good and safe one!

I am having chicken peanut satay and organic white rice for dinner and I am making myself a treat of caramel popcorn to watch "Hocus Pocus" & "Ghostbusters" tonight. I do not have any pots with lids anymore, so I had to be creative to cook the rice. I also discovered that my TV from 1990-something doesn't have any DVD hookup to it. So I have been watching all my old VHS movies in the evenings. Which is rather fun.

Just in case I made you hanker for some Caramel Popcorn too, here is the recipe. It is really easy. I was making it while I was cooking my dinner.

 





Caramel Popcorn

8 cups of popped popcorn. (Half was air popped, the other half cooked on the stove last night)
3/4 cup packed brown sugar
6 TB butter
3 TB light corn syrup (I had just a week bit so I tossed in some blackstrap molasses too)
A dash of sea salt

Toss all that in a pot and bring to a boil. Boil 5 minutes. DO NOT try to sample it.. you will get burnt!

Then add 1/4 tsp baking soda and 1/2 tsp vanilla (try the vanilla recipe in one of the DTTR issues)

After the mixture has boiled, pour over the top of the popped popcorn in a ovenproof baking dish. Stir. Bake at 300F for 15 mins. Stir again and bake another 5 minutes. Cool.. Enjoy!
