While I am waiting on the realtor to re-contact me to head back out to the 6
acres which I did a drive-by yesterday, I am pacing and there is nothing here
for breakfast which sounds appealing this morning, so I decided to bake some
muffins on this decidedly Autumn morning.


EASY COCONUT MUFFINS

4 large egg whites (ooops, I threw in whole eggs.. oh well, they taste
wonderful!)

1 1/2 cups shredded coconut

2/3 sugar

1/2 cup flour

1/2 tsp vanilla extract

1 stick salted butter melted

Whisk the eggs until smooth and a little foamy, then add thr rest of the
ingredients and stir carefully.

I used those silicone muffin pans since mom had them here as I couldn't find any
others. I will have to check and see how health friendly they are. But they did
not require muffin liners and they popped right out.. and one landed in the dog
water bowl.. ewww.

Bake at 350F for 20 minutes and they are good to go. I had 2 for breakfast.
