last night was pretty darn good. And I loathe cooked mushrooms. (Probably
due to canned mushrooms Ick!)

Creamy
Mushroom & Wild Rice Soup
(Yep, that is
our dinner pictured above)
1 cup sliced fresh brown mushrooms
1/2 cup sliced mushrooms to add the end
1/2 cup thinly sliced carrot
1/2 cup sliced celery
3 tb butter
2 cups chicken broth
1/2 cup wild rice or mixed rices, uncooked
1 cup water
2 tablespoons potato or other flour or cornstarch
3 cups milk
As much Cajun spice as you like
Cook vegetables in butter 5 minutes. In a food processor blend mushrooms and
some chicken broth or water until almost
smooth return to saucepan, bring to a boil and then reduce heat.
Add remaining ingredients and cook until thickened out into soup
bowls and serve with bread straight out of the oven (you can do it!).
After I had dinner started, "Kid" and I went for a nighttime run with the dog team. On Sunday I picked up the last 2 dogs for my permanent team. I used to run 6 dogs, but after having only 2-4 of them for the last couple years, it was pretty thrilling and an adrenaline rush.
Last nights run in the dark, at -10c/14f, out under a starry sky.. started out with a Ooops. When "Kid" went to open the gate to the back pastures, where I run a 2 mile loop with the dogs every day, "Kit" the pony escaped out the gate. I told "Kid" to leave the gate open as the team was hot-hot-hot and there pretty much was no turning back until we had them out for a mile. We got back to the kennels in a flash and I got them unhitched and fed while the boys went to find the pony. They scared her back up onto our property and then back through the gates.
When we got back in to warm up and for me to work on the rest of dinner, like baking bread, my guy got home and within just minutes we were eating. The guys told me to write this recipe down as I usually just start tossing things together and do not remember then down the road, so here it is to share with you.
