US Thanksgiving Day is tomorrow. I had actually almost forgotten about it. Maybe
I am getting more Canadian than I knew. The power being off did not help matters
either I suppose.
I thought I would share my Stuffing Recipe. I do not cook it in the bird, but rather in a casserole dish on the side. I make this during the summer as well from time to time when herbs are at their freshest and I have leftover homemade bread.
tenzicut's Holiday (or any other time) Stuffing Recipe
Day old dried bread crumbs,
preferably homemade, broken into 1" cubes
Chicken or Turkey broth 1-3 cups
1-2 crisp apples cored and chopped, leave peels on
1/4 cup of almonds crushed
Fresh or dried Thyme, Oregano and Sage to taste, chopped
1-2 onions chopped finely
3-7 stalks of celery, chopped finely
Mix everything together, add just enough broth to make the dressing moderately moist, but not soggy. Reserve any extra broth in case you need to add it if the dressing is drying out during cooking. Cook at 350F until done. You may also cook this in a slow cooker or on top of the woodstove with a 1/2" spacer under the cooking utensil.
We had a tiff of snow last night. Not much to amount to anything after that first blizzard effect we had, but it has made things alot less slippery in the driveway. Our rabbit also died last night. I am not sure why, but I think she would have been a stewer anyway since she refused to breed. We will be having more come up in a few months from the coast we are hoping. I am sad, but not devastated about it.
